This is the cheese that loves to be cooked. It hails from Cyprus and is traditionally made of sheep or goat milk. Because it doesn't melt when heated, instead holding its shape, it is a great cheese to heat over a BBQ. This cheese has a spongy almost rubbery texture and its flavour is salty and slightly tangy. You can eat it raw, but definitely tastes better when cooked.
