- desiccated coconut (100g)
- ground almonds (100g)
- cocoa powder (20g)
- powdered erythritol (30g)
- orange (1 large, zest and 4 tbsp juice)
Method
In to a food processor, place dry ingredients: desiccated coconut, cocoa powder, ground almonds and powdered sweetener.
Blend together.
Zest you orange and squeeze the juice.
Add in the zest and blend. Now add in tablespoon by tablespoon the squeezed orange juice until you have a sticky consistency that you can roll into balls. You can have a taste of the mix. If you think it needs more sweetener or cocoa then do so now until you are satisfied.
Roll the mixture to balls and pop in the fridge for 60 minutes until set.
You can now decorate them however you like.
Notes
White icing: To make my white chocolate icing - I like using 20g cacao butter, 2 tsp powdered erythritol, vanilla and 1 tbsp double cream. I do it over a Bain Marie, slow and steady. I melt the cacao butter first before reducing the heat and adding the vanilla and powdered erythritol. Mix it in. Now add in the double cream. Whisk it through. You do not want the mixture to split. You can add more sweetener if needed.
Add to the energy balls. You want the balls to be fridge cold so that the chocolate mix sets straight away.
