These simple carrot and banana bites are very similar in consistency to the undercooked part of a carrot cake we all love! They are dense but incredibly moist. The grated carrot adds a delicious bite to this recipe, the banana adds subtle sweetness along with the ground cinnamon. Perfect as a snack on the go or for breakfast with some full fat natural yoghurt and toasted walnuts. I created this recipe for my two young daughters and have since shared it far and wide, with many people putting their own twist on them. If you would like a lower carb alternative to the banana then you could use cooked and mashed apple or make them savoury and use pumpkin / butternut squash or celeriac. I only use one banana in this recipe so, per portion you only have about 3g carbs per bite.

Ingredients

  • banana, mashed (100g)
  • carrot, grated (70g)
  • eggs, large
  • cinnamon, ground (1 tsp)
  • desiccated coconut (15g)
  • ground brown flax (40g)

Method

Preheat the oven to 180C.
In to a mixing bowl, mash the banana and then add the grated carrot. Mix together.
Add in the ground cinnamon, ground flax, desiccated coconut and then beat in the eggs.
You should have a cake batter consistency.
Grease a 2lb baking loaf tin and spoon the batter into it.
Bake for approximately 20 minutes until firm and cooked.
Allow it to cool before slicing and keeping in a sealed container in the fridge for up to 1 week in the fridge.
