A flavour packed dish, ideal for sharing with friends or family. One of the most perfect things about the konjac spaghetti is how quick it is to cook and serve. No need for waiting for water to boil, you just have to drain it, pop it in to the sauce / pan to heat through and serve. It makes life following a low carb lifestyle much more straightforward. For anyone with diabetes, this recipe is perfect for a quick dinner. It makes pasta possible!
Ingredients
- olive oil (2 tbsp)
- sun-dried tomatoes (60g)
- fresh basil (2 tbsp, chopped)
- tinned tomatoes (200g)
- whole garlic cloves (2, chopped or minced)
- apple cider vinegar (2 tbsp)
- fresh cooked king prawns (150g)
- black pepper (1/4 tsp)
- Konjac spaghetti (200g)
- oregano (1/2 tsp)
Method
In to a pan over medium heat, add olive oil. Fry off the garlic and sun-dried tomato for 2 minutes.
Add in the apple cider vinegar, oregano, tinned tomatoes and prawns.
Continue to fry. The sauce will thicken.
Now add in the chopped fresh basil, black pepper and konjac spaghetti (please follow pack instructions before adding it). Cook for a further 2 minutes until piping hot and serve.
Garnish with parmesan or some toasted nuts.
