We have several celeriac mash style dishes on our app, why? Because this vegetable tastes awesome. It is also jam packed full of good nutrition, vitamins and minerals; yet so few people cook with it. If you love our version with cheese, then you will adore this too. Especially if you're a whizz at making homemade mayonnaise.
Ingredients
- Celeriac
- Homemade Mayonnaise (3 tbsp)
- Coriander (1/2 cup)
- Salt & Pepper (to taste)
- garlic (2 cloves)
Method
Peel the celeriac and cut into chunks and cover in water, add some salt and chopped garlic, bring to boil for 15 to 20 mins. It's cooked when you can easily slices through the celeriac with a knife.
Drain the water, add mayonnaise and chopped coriander. And then either mash them or use a hand blender (depends whether you want a smooth texture or not).
Further jazz it up with either black pepper, horseradish or even more of your favourite herbs.
