Such a simple and delicious treat. These peppermint creams are quite similar to shop bought "After Eights" but without the blood sugar rollercoaster you find yourself on afterwards. The trick is NOT to over peppermint them as too much will be most unpalatable. So, 1 or 2 drops max, please. Try your mixture as you go and remember that as they set, the peppermint flavour will really take hold. So less is always more, with this recipe. Most supermarkets sell peppermint oil or essence, but just be aware that some might have added glucose syrup. These are great served at the end of a meal or as a treat during the day. The recipe makes 14 pieces.
