This tasty meal prep option brings a little spice to weekday lunches. Perfect to prep in advance, the prawns, salad and rice will keep in the fridge for up to three days stored in airtight containers.

Ingredients

Prawns

  • raw king prawns (500 g shell off and deveined)
  • smoked paprika (2 tsp)
  • olive oil (1 tbsp)
  • dried oregano (1 tsp)
  • cayenne pepper (1 tsp)
  • garlic (1 clove minced)
  • onion powder (1/2 tsp)
  • sea salt (1/4 tsp)
  • black pepper (1/8 tsp)

Rice

  • riced cauliflower (4 cups)
  • olive oil (2 tbsp)
  • cayenne pepper (2 tsp)
  • tomato pur�e (1 tsp)
  • celery (1 stick finely diced)
  • green bell pepper (1 small finely diced)
  • garlic (1 clove minced)
  • vegetable stock (1/2 cup)
  • red onion (1/2 medium finely diced)
  • Salt and pepper (to taste)

Salad

  • spring onions (2 large sliced)
  • olive oil (2 tbsp)
  • lemon juice (2 tsp)
  • tomato (1 medium diced)
  • cucumber (1 cup diced)
  • parsley (1/3 chopped)
  • red chilli (1/4 medium de-seeded and finely chopped)

Method

To prepare the rice, add 1 tablespoon of olive oil in a large pan over a low/medium heat. Add the onion, celery and green pepper and stir well to combine. Sweat until tender.\n\nAdd the garlic clove and stir well. Add in the remaining olive oil, tomato pur�e and cayenne and mix together well to combine, cooking for a further minute until fragrant.\n\nAdd the cauliflower rice and stir well into the oil and seasoning. Add the stock and stir well. Continue to simmer until all the stock has been absorbed.\n\nPreheat the oven to 200 degrees Celsius or 180 degrees for fan assisted.\n\nTo prepare the prawns, add the seasonings and oil to a mixing bowl and stir together well to combine. Add the prawns, coating them in the spices and oil.\n\nArrange the prawns across a shallow baking tray in an even, single layer. Transfer to the oven for 6-8 minutes or until pink and cooked through.\n\nWhilst the prawns are cooking, add all the salad ingredients to a mixing bowl and toss well to combine.\n\nDivide the prawns, salad and rice into four portions for serving.\n
