A flavour packed dish that takes minutes to prepare and bake. You can do this in the oven / a pan or an air fryer. Miso has a wonderfully rich and salty flavour and compliments cod beautifully. The whole dish is less than 1 g carbs. I like to serve it with a light spring onion and grated carrot salad.
Ingredients
- miso paste (10g)
- garlic (1 clove, crushed)
- almond butter (20g, smooth)
- lime (squeeze)
- cod (2 fillets)
- parma ham (4 slices)
Method
Preheat oven to 180C.
In to a small bowl, place miso, garlic, almond butter and lime. Whisk together.
Lay out the cod fillet on to 2 slices of parma ham and coat in the miso paste. Roll up in the ham.
Pop on a baking sheet and place in to the oven for 10 minutes until the cod is light and flakey.
Serve straight away.
