A beautifully vibrant, taste packed dish. In this recipe I am using the cashew nut pesto recipe from the app to make this delicious pesto penne pasta. Super quick.

Ingredients

  • Konjac penne pasta (270g)
  • cashew nut pesto (4 tbsp)
  • fresh red chilli, finely sliced (1/2)
  • grated parmesan (20g)

Method

Drain the penne in to a colander.
In to a deep wok, add the penne and dry fry for 1 minute.
Add in approximately 4 tablespoons of pesto and 1 tablespoon water and stir through.
Spoon on to plates and add fresh chilli and parmesan to taste.
