This is an ideal snack, originally a Sicilian street food where it is known as cipollate catanesi . These can be cooked in the oven. Alternatively, they will cook perfectly over a BBQ.

Ingredients

  • Spring Onion
  • Pancetta (6 or 12)
  • Lemon

Method

STEP 1
Cut the root off the spring onions, then wash and dry.

STEP 2
Tightly wrap the 1 or 2 slices of pancetta around one large, or two small, spring onions. To ensure the pancetta stays on the onion, place a few cocktail sticks through the middle.

STEP 3
Cook the wrapped spring onions in an oven at 180 degrees for 15 minutes. Turn halfway through the cooking time, and cook until the bacon is crisp.

STEP 4
Remove from the oven, and transfer to a serving plate, then squeeze over the lemon juice.
