Turkey is a wonderful lean meat, that, when cooked properly is juicy and flavour packed. I really recommend seasoning turkey before cooking it. If you buy pre cut turkey steaks then you will need to air fry them or pan fry them as they can dry out very quickly if you oven bake them for too long. A quick blast in the airfryer is my favourite way to cook them. Season them well for an hour or so beforehand. Serve with a fresh salad, packed with colour and texture.

- turkey steaks (250g (approximately 2))
- smoked paprika (2 tsp)
- sea salt (1/2 tsp)
- pepper (1/2 tsp)
- chilli powder (1/2 tsp)
- olive oil (2 tbsp)
- mixed leaves (4 handfuls, chopped)
- edamame beans (4 tbsp)
- mixed seeds (2 tsp)
- grated carrot (50g)
- cherry tomatos (6, halved)
- spring onion (1 chopped)
- apple cider vinegar (1 tbsp)
- lime juice (2 tbsp)
Method
On to a plate place turkey steaks.
In to a small pot add the smoked paprika, sea salt, pepper, chill powder, close the pot and give it a shake.
Drizzle each steak with a little olive oil and massage in to each one on both sides.
Sprinkle the spice mix over each one on both sides. Place back on the plate and leave in the fridge for up to one hour to marinade.
Preheat your air fryer or you can bake at 180C or pan fry.
If you are baking : 5 minutes and then flip and cook for a further 5 minutes. Cut in half to check cooked through.
If you are air frying: 6 minutes total cooking time. Cut in half to check cooked through.
If you are frying: grease a deep frying pan, over medium to high heat. Flash cook each side on high, before reducing heat to low and cooking for 5 minutes until cooked through.
Slice up the turkey ready to serve.
Salad method
As with any salad, it is a chuck it together and toss it.
In to a deep mixing bowl add the chopped salad leaves, edamame beans, mixed seeds, grated carrot, cherry tomatoes and spring onion.
Add 1 tbsp olive oil, 1 tbsp apple cider vinegar and grated lime and generous squeeze of lime juice.
Mix the salad together combining all the flavours.
To serve: split salad on to plates (this recipe is for 2 or 3 servings) and add sliced turkey on top.
