I was on holiday with my family and way trying to find ways to kick start the kids day with more fibre, but without the usual source of fibre you get from carb loaded bread and the cereals. This breakfast can be done in one pan, takes less than 5 minutes. It really is the definition of a quick and easy meal that is deliciously nutritious.
Ingredients
- Konjac Spaghetti (400g (2 boxes))
- Bacon (8 rashes)
- Garlic (3 cloves)
- Eggs (2 tbsp)
- Tomatoes (2 large)
- Olive Oil (Drizzle)
- Salt & Pepper (to taste)
Method
Chop up the bacon and garlic and cooking a large frying pan with olive oil. As the bacon starts to look cooked, simply throw in the 2 eggs and stirred till they become scrambled.
Then add in the tomatoes, mushrooms and noodles and heated for 2 to 3 minutes. Added some salt and pepper and any of your favourite herbs or spices (I dish it up for the kids first then stir in some chilli for myself) . Job done and totally, totally delicious.
