Here is a great way to get fibre into your breakfast or lunch, but without the usual source of fibre you get from carb loaded bread and the cereals. This breakfast can be done in one pan, takes less than 5 minutes. You can literally use so many different types of fish. You can buy salmon flakes in the supermarket, canned tuna, or even turn the clock back and go with the traditional English kippers! It really is the definition of a quick and easy meal that is deliciously nutritious.
Ingredients
- Konjac Tagliatelle (400g)
- Fish (variable)
- Eggs (2 tbsp)
- Tomato
- Garlic (3 cloves)
- Salt & Pepper (to taste)
- Herbs (optional)
Method
If your fish isn't cooked, cook it first and put to one side.
Chop up the garlic and cook in a large frying pan with olive oil. As it starts to brown, simply throw in the eggs and stir till they become scrambled.
Then add in the tagliatelle and 2 finely chopped tomatoes, fish and heat for 2 to 3 minutes.
Add some salt and pepper and any of your favourite herbs or spices. As I often do, I dish it up for the kids first then stir in some chilli for myself.
