Cranberries are not only delicious, they are also a superfood when it comes nutrient density. They are jam packed full of vitamin C and vitamin k (hard to get sufficient k in most diets), fibre and antioxidants. Ingredients
- Cranberries (280g Frozen)
- Apple
- Cinnamon (2 tsp)
- Vanilla (1 tsp)
- stevia (1 tsp)
- Lemon Juice (1 tbsp)
- c8 oil (tbsp)
How to Make
First grate the apple.
Next, heat a tablespoon of c8 oil (or coconut oil). Then put all the ingredients in together and reduce heat to medium-low, cover with a lid (try and get a lid with a small hole to let the moisture out), and simmer. Every 10 minutes or so give it a stir and cook for about 30 minutes.
You have 2 options here, if you want it more jammy, then put all the ingredients in a blender or you can crush the cranberries in the saucepan. If I am using it as a jam, I blend, but if I am using it as a side to cheese or my pate, then I crush the berries. Let cool completely and transfer to a jar. As long as you can seal it tightly, it should last for about 5 weeks in the fridge.
