A delicious salmon dish marinated in a gorgeous sticky orange sauce and paired with aubergine. This is a truly flavoursome recipe!
Ingredients
Ingredients for the salmon
- Juice from one orange (1/4 cup)
- Garlic (1 clove, grated)
- Salmon (2 fillets)
- Honey (1 tbsp)
- Olive oil (1 tbsp)
- Chilli flakes (1 tsp (optional))
Ingredients for the aubergine
- Soy sauce (reduced sugar) (2 tbsp)
- Honey (1 tbsp)
- Olive oil (1 tbsp)
- Green veg mix (220g)
Method
Begin by pre-heating your oven to gas mark 4.
In a bag, add your salmon fillets and the ingredients for the salmon and shake well. Pop the bag into the fridge to marinate for a few hours/overnight.
When you're ready to prep your meal, slice your aubergine in half and score it with crisscrosses.
In a bowl, mix together the aubergine sauce and then pop this on top of the two aubergine slices. Pop them onto a tray with foil and cook for 30 minutes in the oven. After 30 minutes remove from the oven and set aside.
Heat a pan with extra virgin olive oil (make sure it's very hot) and then bring to medium heat. Add your salmon fillets, drizzle the rest of the marinade from the bag over them and cook on medium heat. After 10 minutes, flip both fillets onto the other side and continue to cook until soft pink.
Whilst the salmon fillet's fry in the pan, cook the green veg by boiling or frying the veg and leave to simmer (once cooked) until the salmon and aubergine are ready to serve.
When you have just 5 minutes left of cooking the salmon, add the aubergines to the pan and fry them until you get a charred topping.
Once the salmon and aubergine are fully cooked, serve them up with the veg, sprinkle with pepper and tuck in!
