Padron peppers are grown in the North West of Spain. This is a really simple yet delicious dish that works great as a starter or as part of a selection of tapas. You can cook them simply by frying and adding salt or you can jazz them up with crispy onion or bacon flakes.
Ingredients
- Padron Peppers (about 40)
- Olive Oil (4 tbsp)
- Salt (lots)
- Dried Onion Flakes (4 tbsp)
Method
Heat up the olive oil in a pan and toss in the Padron peppers. Keep turning with a spatula for about 5 to 10 minutes until they start to brown. Toss on a load of salt and serve. Or, jazz them up with some onion or bacon flakes. There is a lot of dynamic contrast in this dish and if you would like to further spice them up, simply add chili flakes.
